The Most Amazing (& Quick) Garlic Noodles

The moment I created my "Recipes" page on this blog, I knew these garlic noodles had to be the first post. They're one of my favorite dishes to make, and taste just as deliciously addicting every single time.


These are a family favorite, and there are never any leftovers! There really is something comforting about a big pan heaping full with golden noodles - especially when they're full of flavor. These noodles are delicious paired with grilled shrimp, crab, veggies, or just on their own. Whether you're looking for a quick, delicious recipe for yourself, or something to feed your family, I hope you enjoy these garlic noodles as much as I do.

As you can see, I've made this dish many, many times.



First off, I want to quickly mention that all of the measurements in this recipe are approximations, as I never measure when I make this recipe and prefer to just eyeball everything or taste as I go. So feel free to add more or less of certain ingredients based on your personal preference. But, if this is your first time making this, you may want to follow the measurements/proportions that I recommend.


This recipe makes about 4-5 servings.

Note: most of these ingredients can be found at Asian grocery stores


Ingredients

  • one package Shanghai noodles

  • cooking oil

  • 5 tbsp. minced garlic

  • 3-4 tbsp. oyster sauce

  • 1 tbsp. Maggi sauce

  • 1/2 tbsp. hoisin sauce

  • 1 tbsp. fish sauce

  • 3 tbsp. butter

  • desired amount of parmesan (optional)


Substitution Ideas

If you don't have Shanghai noodles, you can also use linguine, spaghetti, angel hair, or really any kind or noodle/pasta that you have. As for the sauces I've mentioned in the ingredient list, I will link them all at the end of this blog post so that you can find them if you don't have these sauces. If you don't have Maggi sauce, soy sauce will work just fine. You can omit the hoisin and fish sauce if you don't have those, I just think they add great flavor, but I've made this dish without those two before. If you're interested, there's a recipe for homemade hoisin sauce here, and vegetarian fish sauce recipe here. For a dairy-free dish, you can simply omit the butter and parmesan, or you can use a vegan butter of your choice. I'd say the key ingredient, besides the noodles and garlic of course, is the oyster sauce. Unfortunately, I've yet to think of a substitute for that. Instructions

  1. Start by cooking your noodles. Follow the cooking directions on the package and rinse with cold water when draining to prevent the noodles from sticking. Set aside.

  2. Heat up about 1 tbsp. of cooking oil in a large sauté pan or wok on medium heat.

  3. Toss the minced garlic into the pan and cook until the garlic is golden brown. Lower the heat if necessary.

  4. Once the garlic is lightly browned, turn the heat to low and add butter. Leave the garlic and butter alone in the pan for about 10 minutes. (This will allow the sauce to be more fragrant and have a deeper garlic taste by infusing its flavors into the butter.) If necessary, turn off the heat - you don't want the garlic to cook anymore.

  5. Next, add the oyster, Maggi, hoisin, and fish sauce, or the recommended substitutions. Using a wooden spoon or rubber spatula, mix the sauces together.

  6. Gently add the noodles to the pan and toss to combine with the sauce. If your noodles have cooled down, feel free to turn the heat back to low.

  7. Once the noodles have been coated in sauce, top with parmesan if you'd like.

  8. Serve immediately and enjoy!
